Luchi
Ingredients:
- 300 grams all purpose flour
- 1/2 tsp. salt
- 2 tbsp. + 1 tsp. oil / ghee
- Water as needed
- Oil for deep fry
Making Procedure:
In a large bowl add all purpose flour, salt and mix them well. Then add 2 tbsp. oil or ghee, mix very well and rub the flour with the oil or ghee until it looks like crumbly texture.
Add water and make a semi soft dough. Spread 1 tsp. oil over it and knead it again. Divide the dough into 20 small equal balls.
Now 2-3 drops oil put on the rolling surface, then roll out one portion of the dough (1 ball ) into a circle of 3-4” diameter.
Heat oil in a kadai, drop 1 luchi into it. Fry one side until it puff a little bit & you also get some bubbles on it. Now flip it over and do the same for this side also. Remove it from oil with a slotted spoon.
Serve hot with dum aloo, cholar dal or any curry (veg or non-veg).
