Amsatta Khejur Chutney
Ingredients:
- 1/3 cups amsatta (cut in small cubes)
- 1/3 cups khejur (remove seeds & chopped)
- 1 tbsp.+1 tsp. sugar
- A pinch of panch phoran
- 1 dry red chili
- 1/4 tsp. cumin powder
- A pinch of turmeric powder
- 1/2 tsp. tamarind paste (dissolved in 1 tbsp. water)
- 2 tsp. oil
- Salt to taste
- 125 ml water
Making Procedure:
Heat oil in a pan and add dry red chili & panch phoran. When the seeds splutter add 1/2 of cumin powder and water, bring it to boil. Then add salt, cumin powder, amsatta and khejur. Cook it for 5-10 minutes on low heat. Add turmeric powder, sugar and tamarind water. Stir well and cook it for 2-3 minutes on low flame.
Remove from heat. Pour it into a glass bowl and garnish with chopped cashew nuts. Then let it cool and serve.
