Suji/Sooji (Semolina/Rava) - Bengali Style
Ingredients:
- 100 grams suji
- 50 grams ghee (clarified butter)
- 2 pinch of fennel seeds
- 175 grams sugar (or adjust to taste)
- A pinch of salt
- 15 grams raisins
- 15 grams cashew
- 5-6 pieces almond (chopped)
- 2-3 green cardamom (make powder)
- 200 ml water
Making Procedure:
Heat 30 grams ghee in a pan. Add fennel seeds and suji, stir and mix it well. Stir occasionally on low medium heat to bring changes in color ( the color should be quite lite brown).
Then add sugar and stirring continuously for 1-2 minutes. Add 200 ml water & salt and bring it to boil.
Add cashew, raisins, cardamom powder and mix well. Reduce the heat and when the suji almost dry, stir continuously for 2-3 minutes to make it smooth.
Now add 2 tsp. ghee and stir it for 2 minutes. Remove from heat and let it to cool to lukewarm temperature.
Garnish with chopped almond and serve.
Note: Suji prepared in above method tastes best ( aromatic and soft) when it is lukewarm.
