Dum Chicken
Ingredients:
- 350g chicken (cut into medium pieces)
- 100g kalai / biuli dal (urad / black gram dal)
- 1 1/2 cup + 1/3 cup onion (chopped)
- 1/4 cup tomato (chopped)
- 1 tsp. ginger (grated)
- 1 1/2 tsp. garlic (chopped)
- 2 green chilies (chopped)
- 50g plain yogurt
- 2 bay leaves
- 1 tsp. kasoori methi
- 1 1/2 tsp. coriander powder
- 1/4 tsp. shahi garam masala
- 4 tbsp. oil
- 1 tbsp. pure ghee
- Salt to taste
- 100 + 200 ml warm water
For marination:
- 2 tbsp. onion paste
- 1 1/2 tsp. ginger paste
- 2 tsp. garlic paste
- 1 tsp. turmeric powder
- 1 tsp. red chili powder
Making procedure:
Clean and wash the chicken. Then put it in a colander and keep aside for 30 minutes. Then marinate the chicken with all the ingredients of marination list and keep under refrigeration for 2 hrs. Dry roast the dal and keep aside.
Heat oil in a kadai, add 1 1/2 cup chopped onion and fry till golden brown. Add marinated chicken, stir well and fry it for 5-7 minutes on medium to high heat.
Then add coriander powder, yogurt, kasoori methi and salt. Stir well and fry it for 2-3 minutes on low heat. Add the roasted dal and 100 ml water, mix well and cook it covered for 6-8 minutes on low heat.
In the mean time heat ghee in a pan. Add bay leaves and 1/3 cup chopped onion. Fry it until golden brown, then add chopped garlic and grated ginger. Stir and fry for a minute. After that add green chilies, tomato and fry till mushy.
Now mix the onion-tomato mixture with the chicken. Add 200 ml water, stir well and cook it covered until the chicken and the dal are completely done.
Garnish with few chopped coriander leaves and serve hot with plain rice or roti.
