Tomato Chutney












Ingredients:

  • 500 grams ripe tomato
  • 1/2 tsp. panchphoron
  • 1" cinnamon stick
  • 1 tbsp. ginger (grated)
  • 1/2 tsp. turmeric powder
  • 1/4 tsp. garam masala powder
  • 1/2 cup + 1 tbsp. sugar (adjust to taste)
  • Salt
  • 1 tbsp. oil
  

Making Procedure:


Wash the tomatoes. Then cut them into thick slices and keep aside.

Heat oil in a pan and add panch phoran. When the seeds crackle add tomato slices, turmeric powder, cinnamon stick and salt. Stir it and fry for 2-3 minutes on high heat.

After that reduce the heat to low and cook it covered for 5 minutes.Then open the lid, stir well and cook it till mushy and almost dry. 


Now add sugar, grated ginger. Stir the mixture continuously for 3-5 minutes and add garam masala powder. Mix it well and cook till the it thickens to your desired consistency.

Now pour it into a ceramic or glass bowl. Allow it to cool down and then serve.
