Soya Rice
Ingredients:
- 250 grams basmati rice or any long grain rice
- 1 cup soya chunks
- 1/2 small onion (chopped)
- 2 tbsp. capsicum (chopped)
- 1-2 green chilies (chopped)
- 1/2 small tomato (chopped)
- 1 tbsp. ginger (finely chopped)
- 2 tbsp. yogurt
- 1/2 tsp. red chili powder
- 1/4 tsp. whole cumin seeds
- 1 tsp. soy sauce
- 1 tsp. sugar
- Salt to taste
- 3-4 tbsp. soybean oil
- 1 tbsp. lemon juice (optional)
Dry & Roast Masala:
- 1/2 tsp whole cumin seeds
- 1/2 tsp. whole coriander seeds
Making Procedure:
Boil water in a pan. When the water starts boiling add soaked rice into it and cover it for 2-3 minutes. Then turn off the heat and keep it for 5 minutes with lid. Drain the water and spread the rice on a large plate.
Take 2 cups of water and completely immerse the soya chunks into it. Add a pinch of salt and cook it for 5-6 minutes. Remove from heat; drain and squeeze out the water from it. Rinse well in cold water and again squeeze it. Then keep it aside.
Heat oil in a kadai and temper with cumin seeds. Add chopped onion and fry till transparent. Then add capsicum, ginger and green chilies. Fry for a minute on low heat. Add tomato and fry till soft and pulpy.
Then add red chili powder, roasted cumin & coriander powder; fry for a minute. Then add soy sauce, yogurt, sugar and salt. Mix it well and then add soya chunks. Stir and cook for 2 minutes on low heat.
After that add boiled rice. Mix well and cook it for 3-4 minutes on low medium heat. Now add lemon juice (optional), stir well and cook for a minute.
Remove from flame and serve hot.
