Palak / Spinach Pakora
Ingredients:
- 3 cups chopped spinach (only
leaf)
- 1/3 cup onion (chopped)
- 2 green chilies (chopped)
- 1 tbsp ginger (grated)
- 1/2 tsp. garlic (chopped)
- 1/4 tsp. turmeric powder
- 1 tbsp. rice flour
- 1 cup gram flour (besan)
- Salt to taste
- Oil for deep fry
Making Procedure:
Put the chopped spinach in a colander
and wash it thoroughly under running water. (The colander can help you to clean
the mud and sand very easily). Then keep aside for 20-30 minutes.
After that, in a mixing bowl add spinach, salt and lightly rub them together. Then add onion, green chilies, ginger, garlic,turmeric powder, gram flour and rice flour. Mix well all the ingredients by hand.
Heat oil in a kadai till it begins to smoke. Then reduce heat and take small amount of mixture by hand and slowly drop it into the hot oil, fry them in batches till they turn golden brown and crispy.
Then remove them from the oil and keep it on a paper towel (as it soaks the oil from pakora). Repeat for the remaining portions of the raw mixture.
Now Pakora is ready to serve. Serve hot with tomato ketchup.
