Soya Granules Soup with Lentil Sprouts
Ingredients:
- 1/2 cup soya granules
- 1/4 cup carrot (finely chopped)
- 2 tbsp. sweet corn kernels
- 1 tbsp. onion (finely chopped)
- 1 tsp. garlic (chopped)
- 2 tbsp. whole green lentil sprouts*
- 2 tbsp. capsicum (finely chopped)
- 2 green chilies (slitted)
- 2 tsp. olive oil
- 1/2 tsp. soy sauce
- 1/2 tsp. black pepper powder
- 1/2 tsp. vinegar
- 1/2 tsp. sugar
- 2 tbsp. cornflour (dissolved in 1/2 cup water)
- Salt to taste
- 3 cups water
Making Procedure:
Soak whole green lentil overnight or 5-6 hours. Drain the water and keep aside. And from now on keep it as it is for one day (time for the sprouts to come out).
Pour 2 cups water in a pan and bring it to boil. When the water starts boiling add soya granules, stir and cook it for 3-5 minutes on low flame. Let it cool and put it in a large tea stainer; press lightly to drain excess water.

Heat oil in a pan and add slitted green chilies. When the chilies changes its color remove them from the oil. Then add onion and garlic, fry it for 1-2 minutes on low heat. Add carrot, capsicum and fry it for 2-3 minutes on low -medium heat.
Then add lentil sprouts, sweet corn and soya granules. Stir it for 1-2 minutes on low flame. Add water, corn flour, soy sauce, black pepper powder, vinegar, salt and sugar. Stir well and cook it for 10-15 minutes.
Now the soup is ready to serve. Serve hot with chili sauce and grated cheese (optional).
