Phulkopi Malaikari
Ingredients:
- 1 medium size cauliflower (cut into medium florets)
- 1/3 cup onion (finely chopped)
- 2 tsp. ginger paste
- 2 ½ tsp. cashew nut paste
- 1 tsp. raisins paste
- 150 ml coconut milk**
- 1/2 tsp. turmeric powder
- 1/4 tsp. Kashmiri red chili powder
- 1 tsp. sugar
- 5 tbsp. oil
- Salt to taste
- 50 ml water
- 1/8 tsp. garam masala
- 1 spoon ghee
- ½” cinnamon
- 3 green cardamom
- 4 cloves
- 1/4 tsp. nutmeg
- 2 small leaf of mace
Making Procedure:
Wash the cauliflower and add it in already boiled hot water.Then cover the pot for 2-3 minutes. After that drain the water and put it into a colander for 5 minutes.
Pour oil in a kadai and let it smoke. Then reduce the heat, add cauliflower and fry till they turn golden brown. Remove from oil and keep aside.
Then add ginger paste and fry it for a minute. Add cashew- raisins paste, *spice mix paste, turmeric & red chili powder, salt & sugar and continue stirring for 2 minutes on low heat.
Add the fried cauliflower and mix well. Then add water and stir it for 2 minutes on low heat. Then add coconut milk, mix well and cook it covered for 10-15 minutes on low heat.
Remove from heat, Then spread a spoon of ghee and sprinkle garam masala powder over it.
Serve warm with plain rice.
** 1 1/2 tbsp. coconut milk powder dissolved in 150 ml warm water.
