Cauliflower Chilli Fry
Ingredients:
- 2 cups cauliflower (cut into small florets)
- 6 tsp. hang curd
- 2 green chilies (slitted)
- 10-12 curry leaves
- 1 tsp. cumin powder
- 1/2 tsp. coriander powder
- 1/4 tsp. garam masala powder
- Salt to taste
- 1/4 tsp. sugar
- 1 tbsp. coriander leaves (chopped)
- 6 tbsp. oil
- 50 ml water
For the batter:
- 1/4 cup + 1 tbsp. rice flour / idli mix
- 1/4 tsp. red chili powder
- 1/4 tsp. salt
- 1/4 cup (50 ml )water
Making Procedure:
Mix all the ingredients of batter list and make a thick batter. Add cauliflower florets into the batter and mix well.
Heat oil in a pan and fry the cauliflower into 2 batches. Then remove from the oil and keep aside.
After that add green chilies and curry leaves and lightly fry it on low flame. Then add hang curd, stir it for a minute and add cumin-coriander-garam masala powder, salt, sugar. Mix well and fry it for 1-2 minutes.
Add fried cauliflower, stir well and fry for a minute on low heat. Then add water and cook it covered for 2-3 minutes on low heat. Add 1/2 of the chopped coriander leaves and give a nice stir. Cook it for a minute and turn off the heat.
Garnish with the remaining coriander leaves and serve hot as snacks.
