Ilish Kasundi
Ingredients:
- 3 large pieces of ilish or hilsa fish
- 2 tsp. kasundi
- 1/4 tsp. turmeric powder
- 1/4 tsp. sugar
- 1 whole red chili
- 2 green chilies (slitted)
- A pinch of mustard seeds
- 1 tsp. mustard powder (dissolved in 1 tsp. water)
- 3 tbsp. mustard oil
- Salt to taste
- 1/4 cup water
Making Procedure:
Heat mustard oil in a wok or kadai till it begins to smoke. Then reduce heat and lightly fry the fishes. Remove the fishes from wok and keep it aside.
Now add whole red chili and mustard seeds in the same oil. When it starts to crackle; add mustard paste, turmeric powder and 1 tbsp. water. Stir it for a minute on low flame.
Add salt, sugar and kasundi. Stir it for 2 minutes on low heat or till the oil separates.
Then add fried fish, green chilies and water. Slowly stir it and put on the lid. Cook on low flame for 3-5 minutes on low heat.
Now Ilish Kasundi is ready to serve. Serve hot with plain white rice.
