Uchche Aloo Jhuri (Bittergourd & Potato Jhuri)
Ingredients:
- 1 cup uchche/karala (small pieces & thinly chopped)
- 1 medium potato (cut into julienne)
- 1 small onion (thinly sliced)
- 3-4 tbsp mustard oil
- A pinch of panch phoran
- 1/4 tsp. turmeric powder
- Salt to taste
Making Procedure:
Wash bittergourd and potato separately and Put them into separate colander.
Heat oil in a kadai till it smoke, reduce the heat and add the bittergourd, salt and 1/2 of turmeric powder. Stir well and fry it for 2 minutes on medium heat. Then put the lead on and cook it for 3-5 minutes on low heat or the edges turn light brown color.
Now open the lead, add potatoes, onion and panch phoran. Fry it for 3-5 minutes on low to medium heat. Add remaining turmeric powder and salt. Mix it well and put the lid back. Stir occasionally and cook it for 4-5 minutes on low heat.
Remove from heat and serve hot with plain rice.
