Potato and Coconut Sweet Curry
Ingredients:
- 350 grams potato
- 1 small tomato (make a paste)
- 1/2 small capsicum (make a paste)
- 1 medium onion (finely chopped)
- 3 green chilies (chopped)
- 1/2 cup coconut paste
- 2 1/2 tsp. poppy seeds paste
- 3-4 green cardamoms (make a paste)
- 1/2 tbsp. cashew nut paste
- 1 tsp. cumin powder
- 1 tsp. sugar
- 2 tsp. ghee
- 100 ml white oil
- Salt to taste
- 125 ml water
Making Procedure:
Boil the potatoes and cool them. Then peeled them and cut into cubes (1 potato = 4 pieces).
Heat oil in a pan and add the boiled potatoes. Fry till it turns golden brown in colour. Then remove from the oil and keep aside.
Now Add ghee in the same oil. Then add chopped onion and fry it till transparent. Add tomato & capsicum paste and fry it for 2-3 minutes on low flame. Then add coconut, poppy seeds, cashew nut and cardamom paste. Stir well and fry it for a minute.
After that add chopped green chilies, cumin powder, salt and sugar. Mix it well and fry it for 1-2 minutes on low heat.
Now add the fried potatoes and water. Stir it well and cook it for 2-3 minutes or the gravy is almost dry.
Remove from heat and serve with luchi, paratha or roti.
