Pineapple Rava Kesari


Ingredients:

  • 1/4 cup anaras (pineapple)
  • 1/3 cup rava (sooji)
  • 75 grams sugar (or adjust to taste)
  • 3 tbsp. pure ghee (clarified butter)
  • 50 ml + 1 tbsp. milk
  • 1/4 tsp. saffron (make a paste with 1 tbsp. milk)
  • 1/4 tsp. green cardamom powder
  • 15 grams cashew nuts
  • 15 grams raisins
  • 200 ml water 


Making Procedure:


In a dry kadai roast sooji until it turns very light brown color. Remove from heat and let it cool. In the mean time- clean, wash and grate the anaras.

Heat ghee in a kadai and add the roasted sooji and grated anaras. Add sugar and fry it for a minute on simmer. Then add water, milk, saffron paste, cashew nuts, raisins and half of green cardamom powder into it. Stir well and cook over low heat for 5 minutes or till the water is absorbed.

Now add remaining green cardamom powder. Stir continuously and mix it well.

Remove from heat and pour it into a serving bowl. Spread 1 tsp. ghee over it and garnish with few 
cashew nuts and raisins  .

Now Pineapple Rava Kesari
  is ready to serve. Serve hot or warm as you prefer.
