Chicken Multani
Ingredients:
- 250 grams chicken with bone (cut into 5 pieces)
- 2 medium sized onions (cut into slices)
- 6-8 curry leaves
- 1/4 tsp. black mustard seeds
- 1/2 tsp. turmeric powder
- 2 1/2 tbsp. pure ghee (clarified butter)
- Salt to taste
- 200 ml warm water (or as needed)
For marinade:
- 2 tbsp grated coconut
- 1/2 tbsp. coriander seeds
- 1 tsp. cumin seeds
- 1/2 tsp. poppy seeds
- 2-3 dry red chilies
- 1 tbsp. tamarind paste
- 1 tbsp. ginger paste
- 1 1/2 tbsp. garlic paste
Making Procedure:
Clean and wash the chicken, then put it in a colander and keep aside for 10 minutes.Then mix chicken with all the ingredients of marinade list. Keep this in the refrigerator for 1 hour.
Heat ghee in a pan, add mustard seeds and curry leaves. When the seeds splutter add onion slices and fry it until the edges of the onion turns light brown in color.
Now add the marinated chicken and salt. Stir and mix well. Cook it for 3-5 minutes on medium heat.
Then add water and mix well. Cook it covered on low heat until the chicken becomes soft and tender.
Remove from heat and pour it into a serving bowl. Serve hot with plain white rice.
