Baingan Bharta with Egg
Ingredients:
- 1 medium sized eggplant (baingan)
- 1 egg
- 1/2 medium sized onion (chopped)
- 1 tsp coriander leaves (chopped)
- 1 tsp. ginger paste
- 1/4 tsp. turmeric powder
- 1/2 tsp. sugar
- 1/4 tsp. red chili powder
- 2 pinch garam masala powder
- 2 tbsp. oil
- Salt to taste
For tempering:
- 1 bay leaf
- 1 cardamom
- 1-2 cloves
- 2 black peppercorn
- 1/2" cinnamon stick
Making Procedure:
Wash the eggplant and cut into 4 pieces. Then boil the egg and eggplant. After boiling, cool them. Peel the egg and smash them together by hand in a bowl. Then keep it aside.
Heat oil in a kadai and temper with bay leaf, cardamom, black peppercorn, cinnamon stick. Add chopped onion and fry till the edges turn golden brown in color.
Then add ginger paste, turmeric powder, red chili powder, garam masala powder and salt. Fry it for 2 minutes on low heat. Add sugar and fry it for 30 seconds.
Now add the smashed mixture, stir continuously and fry it for 10-12 minutes or a little oil comes out from the side, on low to medium heat.
Remove from heat and garnish with chopped coriander leaves. Serve with rice or roti.
