Chicken Spice Mix
Ingredients:
- 500 grams chicken with bone (cut into medium pieces)
- 2 medium onion (finely sliced)
- 1 tsp. garam masala powder
- Salt to taste
- 6 tbsp. mustard oil
- 100 ml warm water
- 2 medium onion (make into a paste)
- 1½ tsp. ginger paste
- 1½ tsp. garlic paste
- 2 tbsp. chili vinegar
- 2 tsp. lime juice
- 1 tsp. turmeric powder
- 2 tsp. cumin powder
- 2 tsp. coriander powder
- 1½ tsp. red chili powder (I used kuthilal)
- 1 tsp. Kashmiri chili powder
- 1½ tsp. sugar (or adjust to taste)
- 1 tbsp. mustard oil
Making Procedure:
Clean and wash the chicken pieces, then put into a colander and keep aside.
In a mixing bowl mix all the ingredients of marinate list and add the chicken pieces, coat well with the spice mixture. Then the marinated chicken keep in the fridge for 1½ - 2 hours.
Heat 6 tbsp. oil in a kadai till smoking. Add sliced onions and fry until they turn golden brown in color.
Now take out the chicken pieces from the spice mixture (make sure that you put the chicken pieces in the kadai without the spice mixture in which it is marinated). Then fry it with the onions for 5-7 minutes on medium heat.
Now it is time to add the remaining marinating spice mixture, stir it to mix it well with the chicken pieces and fry for 2-3 minutes on low heat.
Add water, salt and stir to mix. Cover the kadai, lower the heat and cook until chicken is tender and the thick gravy remains.
Remove from heat, sprinkle garam masala over it and serve with plain white rice or paratha.
