Lady's Finger with Onion and Potato
Ingredients:
- 500 grams dherosh (lady's finger)
- 2 medium sized potato (julienne cut)
- 2 medium sized onion (sliced)
- 2-3 red chilies (chopped)
- 1 tsp. panch phoran
- 1/2 tsp. turmeric powder
- 1/4 tsp. sugar (optional)
- 5-6 tbsp. mustard oil
- Salt to taste
Making Procedure:
Wash well the dherosh and cut into 1" sized pieces.
Heat 3 tbsp. oil in a kadai, add dherosh and fry 1 minute on high heat. Then add a little salt & turmeric powder, stir it and cook it covered for 2 minutes on low medium heat.
Now open the lid, stir it and fry until they are semi brown spotted. Now remove it from heat.
Heat the remaining oil in another kadai add panch phoran & onion and fry for about 2 minutes.
Then add the potatoes, red chilli turmeric powder, salt, sugar (optional), mix it well and fry until the potatoes are done.
Now add the fried dherosh into it, stir it well and fry for a minute on high heat. Remove from heat and sprinkle pinch of panch phoran.
Serve hot or warm with plain roti.
