Kochurir Aloor Torkari / Potato Curry

You can have this spicy potato curry with kochuri at sweet shop all throughout Kolkata. A favorite breakfast item for all bengalis. This curry is a simple dish to make.

Kochurir Aloor Torkari / Potato Curry



Ingredients:
  • 4 medium size potato (peel and cut into medium cubes)
  • 1 tbsp chopped onion (optional)
  • 1 small tomato (chopped)
  • 1 tbsp peanut
  • 1-2 green chillies (slit)
  • 1/2 tsp ginger (grated)
  • 2 tbsp. oil/mustard oil
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1⁄4 tsp kashmiri red chilli powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp aamchur powder (Dried Mango powder)
  • 1/4 tsp black salt
  • 1/4 tsp hing (Asafoetida)
  • 1⁄4 tsp kasuri methi
  • 1/4 tsp sugar (optional)
  • Salt
  • 1 cup water
For tempering
  • 1 whole dry red chili
  • 1/2 tsp panch phoron

Making Procedure:

Heat oil in a kadai add peanut and fry or a minute. Remove from the oil and set aside.

Add potato cubes and fry till light golden color, remove and keep aside.

Then temper the oil with whole dry red chili and panch phoron, add chopped onion and fry it till they become transparent. Add tomato and green chilli, fry till tomatoes are soft.

Now add ginger, stir, then add all powder spices black salt and hing. Fry for few minute on low flame. Crush some kasuri methi and add it, stir. Add 1 tbsp water and keep stirring until it starts leaving oil.

Now add the fried potato, mix well. Add peanut and salt, stir well to coat with the spices.

Then add water, stir to mix well. Cook it covered for 10-15 minutes on low heat or the potatoes are completely done.


Serve the hot with Kochuri, Luchi or Porota. Enjoy it 😋😍
