Doi Phulkopi (Cauliflower with Curd)

Doi Phulkopi


Ingredients:

  • 1 medium size cauliflower (cut into medium florets)
  • 1 medium +1 small onion (make a paste)
  • 2 green chilies
  • 1 tbsp. ginger-garlic paste
  • 4 tbsp. curd (cold & thick)
  • 2 tsp. raisin paste
  • 2 tsp. cashew paste
  • 1/4 tsp. mace-nutmeg paste
  • 3/4 tsp. sugar
  • 85 ml oil
  • 2 tsp. gawa ghee
  • 1/2 tsp. shahi garam masala powder
  • 200 ml water
  • Salt to taste

To temper:
  • 2 bay leaves
  • 3 whole green chilies
  • 1'' cinnamon stick
  • 3 green cardamom
  • 4 cloves

Making Procedure:


Wash the cauliflower and add it in already boiled hot water. Then cover the pot for 2-3 minutes. After that drain the water and put it into a colander for 5-7 minutes.

Heat oil in a kadai and temper with all the ingredients of 'to temper' list. Then reduce the heat, add cauliflower and fry till they turn golden brown. Remove from oil and keep aside.

Now add onion paste in the same oil and fry it till light brown. Add ginger-garlic paste and fry it for a minute. Add cashew- raisins paste, curd, mace-nutmeg paste, salt & sugar and continue stirring for 2 minutes on low heat.

Add the fried 
cauliflower and mix well. Then add water and stir it for 2 minutes on low heat. Then add water, mix well and cook it covered for 10-15 minutes on low heat.

Then spread a spoon of ghee and sprinkle garam masala powder over it. Stir well and cook it for a minute.

Serve warm with plain rice.
