Cauliflower & Potato Curry












Ingredients:

  • 1 medium size cauliflower (cut into medium florets)
  • 1 large potato 
  • 1/2 cup onion (chopped)
  • 1/3 cup tomato paste
  • 50 grams yogurt
  • 2 1/2 tsp. ginger paste
  • 3 tsp. charmagaz paste (melon seeds) 
  • 1/2 tsp. black pepper powder 
  • 1 tsp. coriander powder
  • 1/2 tsp. cumin powder
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. Kashmiri red chili powder
  • 1/2 tsp. red chili powder
  • 1/4 + 1/4 tsp. garam masala 
  • 1 tsp. sugar
  • 5 + 2 tbsp. oil
  • Salt to taste
  • 250 ml water

To temper:
  • 2 whole dry red chilies
  • 2 bay leaves
  • 1/4 tsp. whole cumin seeds

Making Procedure:


Wash the cauliflower and add it in already boiled hot water.Then cover the pot for 2-3 minutes. After that drain the water and put it into a colander for 5 minutes. Peel the potato and cut into 1" size cubes. Wash well and keep aside.

Pour 5 tbsp. oil in a kadai and let it smoke. Then reduce the heat, add potato cubes and fry till golden colour. Remove from the oil and set aside. Then add cauliflower and fry till it reaches golden brown colour. Remove from oil and keep aside.

Now add 2 tbsp. oil into the same kadai and let it smoke. Then temper the oil  with all the ingredients listed under 'to temper' then add chopped onion and fry it till they become transparent.

Then add ginger paste,
 black pepper powder and fry it for a minute. Add tomato paste and fry it for 2-3 minutes on low to medium heat.

After that add charmagaz paste, turmeric, cumin, coriander, kashmiri red chili, red chili and 1/4 tsp. garam masala powder. Fry it for a minute; then add yogurt, salt & sugar and continue stirring for 2 minutes on low heat.

Now add the fried potato & cauliflower and mix well. Then add water and stir well. Cook it covered for 10-15 minutes on low heat or the veggies are completely done.

Remove from heat and sprinkle remaining garam masala powder over it. Serve hot with roti.
