Chalkumro with Coconut

Ingredients:

  • 1 medium size chalkumro
  • 1/2 cup coconut (grated)
  • 1-2 green chilies (finely chopped)
  • 1 tbsp. ginger paste
  • 1 tsp. turmeric powder
  • 1 tsp. cumin powder
  • 1 tbsp. sugar
  • 4 tbsp. mustard oil
  • Salt to taste

To temper:
  • 2 bay leaves
  • 1/4 tsp. cumin seeds

Making Procedure:


Peel the chalkumro and cut into thin small pieces. Wash well and place it in a pressure cooker along with water. Give 1-2 whistle and remove from heat. Then release the steam and put the boiled chalkumro in a colander to drain the excess water. Keep it for 20-30 minutes.

Heat oil in a pan, temper with bay leaves and cumin seeds. When the seeds splutter add ginger paste and green chilies. Fry it for a minute and add cumin powder, turmeric powder, coconut. Stir well, add 2 tbsp. water and fry for 1-2 minutes on low heat.

After that add chalkumro, salt and sugar. Lastly mix well and cook it for 20-25 minutes on low heat.

Serve with plain rice or roti.
