Aloo Paratha

Ingredients:

 For stuffing:

  • 3 large potatoes
  • 2 medium onions (finely chopped)
  • 3-4 green chilies (chopped)
  • 3 tsp. garlic (chopped)
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • ½ tsp. oil
  • Salt

 

 For dough:

  • 350 grams all purpose flour (maida)
  • 3 tsp. oil
  • 1 tsp. Salt
  • Water as needed 

Other ingredients:


  • Oil or ghee for frying

Making Procedure:


For stuffing:


Peel the potatoes, wash and boil them. Then drain the water and let it cool.

Smash the boiled potatoes. Add chopped onion, green chilies, garlic, cumin & coriander powder, oil and salt. Mix it well by hand and keep aside.



For dough:

In a large mixing bowl mix all purpose flour and salt and mix it very well. Then add oil into it and rub the flour with the oil until it looks like crumbly texture.

Now add water and make a semi soft dough and keep aside.

Aloo Paratha Dough


For paratha:


Knead the dough with 1 tsp. oil and divide it into 8 equal sized balls.

2-3 drops oil put on the rolling surface, then roll out one portion of the dough (1 ball ) into a circle of 3-4” diameter.



Now place one portion of the prepared stuffing in the center of the dough circle.



Then pull the edges of the rolled dough together in the center and seal it tightly to make a ball.

Repeat the process to make 8 balls.

With a little oil roll out the ball again into a 7” diameter circle.


Heat a tawa or griddle, place the paratha over it and after a few seconds the paratha puff in different places.

Now flip the paratha over; after a few second spread oil over it and flip it again.

Fry it both side till the paratha catches some golden brown spots.

Serve hot with pickle and plain curd.
